  What Is Malpua? Malpua is a ghee-fried pancake made from all purpose flour batter. Then dipped into the sugar syrup. Many times it is topped with warm rabdi.  This dessert is popular in Bihar, Orissa, West Bengal, Rajasthan, Uttar Pradesh states. Every region has its own version. Some add fruit puree like banana, pineapple, mangoes etc.  The version I am sharing is made without fruits, khoya and this kind is more popular in Rajasthan, Uttar Pradesh. Mostly it is made during the Holi festival. ❤️Why I Love This Recipe These malpua are crispy around the edges and fluffy, soft, spongy in the center. This is an instant malpua recipe. Traditionally the batter is fermented for 8-12 hours and it makes super fluffy and soft texture. Vs in my recipe, the batter is rested for 30 minutes only. But sure it works wonders. Mango Falooda Recipe   Prep Time: 5 mins Cook time: 15 mins Serves: 2 Ingredients: 1/2 cup Mango Puree or as needed 3 tbsp Rose Syrup / Rooh Afza 1 cup Milk, boiled and cooled 3/4 tbsp Sugar 1 tsp Falooda Seeds / Sabja / Sweet Basil / Tukmaria Seeds 2 – 3 Scoops of Vanilla or Mango Ice Cream 3 – 4 tbsp Vermicelli or Falooda Sev Chopped Mango for Garnish (optional) Cherries or Tutti Frutti for garnish Almonds for Garnish (optional) Instructions: Add sugar to the milk and mix until the sugar dissolves completely. Place it in the refrigerator until chilled. Soak the basil seed in one cup of water for 15 minutes. Drain excess water and set aside. Cook the vermicelli with enough water until soft and cooked. Rinse the cooked vermicelli with cold water and drain. Keep it aside. Place 1.5 tbsp of rose syrup in a glass. Then add 1.5 – 2 tbsp of soaked basil seeds. Mango Mastani Recipe – Indian style thick mango milkshake with ice cream and nuts. A very famous street food from Pune. Mango Mastani is a simple and delicious dessert drink. It is nothing but a thick mango milkshake topped with ice cream, nuts and tutti frutti. You can easily make this yummy mango beverage at home in 5 minutes. Ingredients 2 cups Mango pieces 1 cup chilled Milk 1 tbsp chopped Almonds 1 tbsp chopped Pistachios 3-4 Scoops Vanilla Ice Cream or any ice cream 3 - 4 glazed cherries 1 - 2 tbsp Sugar or as required Ice Cubes optional Tutti Frutti as needed (optional) Mango Mastani Recipe with Step by Step Photos: Wash, peel and chop the mango into pieces. Combine the chopped mango, chilled and sugar in a blender or mixie and blend until smooth and creamy. The consistency of the mango milkshake should be thick. Pour this thick milkshake into the serving glasses and top with a scoop of ice cream.

Mango Kulfi Recipe

Ingredients 2.5 cups Milk 2.5 cups Mango Puree 1/2 cup Sugar (depends on the sweetness of the mangoes) 10 Almonds 1 tbsp Corn Flour / Corn Stratch 1/4 tsp Cardamom Powder A pinch Saffron Instructions: Soak the saffron in a tablespoon of hot milk for a few minutes and crush it well. Keep it aside. Dissolve the corn flour in little water and keep it aside. Grind the almonds into a coarse powder and set aside. Bring milk to a boil. Let it simmer on a low flame for 8 – 10 minutes. Add the sugar, saffron milk, corn flour paste and cardamom powder and mix everything well. Stir continuously and cook on a low – medium flame for 13 – 15 minutes or till the mixture thickens. Turn off the flame. Add the almond meal and mix well. Let it cool completely. The mixture should be thick. Add the mango puree to the milk mixture and mix everything until well combined.
